YOU WILL NEED

1½ tablespoons vegetable oil

4–6 meaty beef short ribs

350ml pale ale

1 tomato, roughly chopped

40g tomato purée

200g chipotles en adobo, chopped

1 tablespoon tamarind paste

5 garlic cloves, dry roasted (see p.26), chopped

finely grated zest of 1 orange

25g dark brown soft sugar

1 teaspoon ground allspice

1 bay leaf

2 teaspoons dried thyme

350ml double-strength beef stock

4 warmed tortillas

shredded iceberg lettuce leaves

grated Cheddar cheese
